In my home we love having a light supper of soup and crackers for dinner. I don't like canned soups so I've come up with some very easy homemade recipes. My corn and ham chowder is a favorite; feel free to change it up according to what is in your pantry, you can't fail : ) I created it so most of the incredients come from Costco and are canned or dried so they are always on hand.
MJ's Corn and Ham Chowder
Make-up one package of instant mashed potatos in large saucepan- my favorite is the "Baby Reds Mashed Potatos" from Costco. To the mashed potato mixture add the following:
One can of evaporated milk (12 fl. oz.)
One pouch of chicken stock (8.25 fl. oz.)
Two cans of corn (lightly drained-retain some fluid)
1 teaspoon garlic powder
3 tablespoons dried chopped onion
Pepper to taste
Lastly, add a cooked meat. I like using leftover ham, coarsely choppped, but cooked chicken would be wonderful as well. I add around anywhere from 1 to 2 cups - it just depends what I have leftover from previous meals.
Heat throughly. If it's too thick just add water or milk to thin.
