Necessity is the mother of invention = really wowser corn bread

Today's post addresses how I solved the pressing problem of crumbly cornbread.

I had a hankering for corn bread to accompany my crockpot pot roast (oh, I could go on about how I love the onions when they've been simmering in all the golden beefy goodness for 10 hours, but I shall refrain.)

Anyway, you know how I love Costco, and I adore their corn bread mix. I had the other ingredients- egg and oil- but no milk. Hmmmm. Instead I used, can you believe it, sweetened condensed milk- about a half a cup instead of the 3/4 cup called for milk.

Oh. My. Goodness. Gerry said they tasted like brownies. But cornbready. And no crumbling. They are dense, rich squares of goodness. And no butter or honey needed. Pure Bliss in an 8 x 8 pan.

  1. Buy the little boxes of milk that they sell for school lunches. They keep on the shelf (tho I put them right in the frig). They're great for the no milk emergency when sweetened condensed won't work!
